Ingredients
- 1,000 g chicken wings, separated into flats and drums
- 15 ml lemon juice
- 30 ml white vinegar
- 1 tsp allspice
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp black pepper
- 1/2 tsp onion granules
- 1/2 tsp ground cloves
- 1/4 tsp cayenne pepper, optional
- 15 g tomato purée
Preparation

Mix lemon juice, vinegar, spices and tomato purée into a thick marinade

Coat the wings thoroughly
Cover and refrigerate for 24 hours.

Set up the BBQ or smoker for indirect heat at 120°C, with a drip tray underneath

Cook until the thickest wing reaches 70°C internally

Increase heat to 220°C and cook until the wings are crisp and reach 75°C internally

Rest for 5 minutes, then serve hot
